It is a somewhat rustic wine, with cocoa-powdery soft tannins, a food-loving acidity and earthy, savory notes to round it all out. Delightful with steaks, chops and saucy dishes.

Once harvest is done and I can relax in front of a crackling fire on a chilly night, this is my go-to, warming, end-of-the-day beverage. POSH is made from late-harvest Syrah, fortified while still sweet with grape brandy. The result is a hedonistic wine with a bouquet of espresso bean and bittersweet chocolate mingling with dried plums. The flavors remind me of Christmas cake, chocolate covered cherries and spiced, baked apples. It will continue to improve with time, and no need to worry about polishing off a bottle once opened - P.O.S.H. likes air. Enjoy!

    There is a saying that “It takes a lot of beer to make great wine”, which comes from the fact that many winemakers reward themselves after a long day... There is a saying that “It takes a lot of beer to make great wine”, which comes from the fact that many winemakers reward themselves after a long day of harvest with a cold and refreshing brewski. Keeping the fun experimentation going, this year the winemaking team received fresh hops (Crystal, Yakima Gold, Cascade and Chinook) from Pacific Valley Hops in Lompoc, dried them in our cold room and then infused these dried cones into our estate Sauvignon Blanc. We love the combination of the herbaceous, piney aromatics that mingle with grassy notes from the wine, and then the crisp, citrusy and minerally flavors and texture on the palate. A delightful patio wine - refreshingly unique and a definite "cross-over" beverage!

    We love bubbles, and not just for New Year’s Eve but for any kind of celebration. So, back in 2014 we decided to see what a sparkler from the Hibbits... We love bubbles, and not just for New Year’s Eve but for any kind of celebration. So, back in 2014 we decided to see what a sparkler from the Hibbits Ranch could do to tickle our palate and our fancy. We pressed early ripening Pinot Noir (hence “white from dark”) into a pretty pink base wine, and then found an expert from Champagne, France to help us craft this into this effervescent beauty. Teeny bubbles release freshly baked bread aromas, and a sip reminds of cherries and white peach, with a crisp, minerally and clean finish. While we might just enjoy this with popcorn on a workday night, we can envision caviar and lobster and southern fried chicken in our future too! Cheers!!
