Fermentation in open-top fermenters was followed by aging in 100%... 2014 was a great growing season, and we harvested our Block 7 Syrah on September 29th. Fermentation in open-top fermenters was followed by aging in 100% French oak barrels until January 2016 when the blend was racked from barrel. This extended ageing in French Oak, of which was new, has enhanced the flavors and structure of the wine.Pairing Suggestion:
